This is like a lazy day recipe.
There is hardly anything involved.
But hey, I am real person after all, some days I just want to whip up something quick.
Plus we had some bread that I needed to use.
So here's what ya need:
Bread: I had some rolls of bakery style sesame buns. Halve it length wise. Done.
Lettuce (I used green leaf)
Tomato- some slices
Onion (Red)- some slices
Cilantro Lime mayo (Mix cilantro, lime juice and mayo- duh.)
Tilapia (1 per sandwich)
And here's what ya do:
Dredge tilapia in blackened seasoning and let sit in your fridge for 15 minutes.
Heat oil in pan and cook tilapia until it flakes nicely (About 3 minutes on each side.)
While those are cooking, throw a little butter on your bread and broil on high, about 3-5 minutes or until golden and toasty.
Then, make a sandwich!

I served this with sweet potato fries and coleslaw.
