Dishes with Dee: Chicken Tostadas with Black Bean and Avocado Salsa


You know those days when you want a really delicious meal but you don't actually want to do any real work?  You're tired.  Its Monday.  Work is haaarrrddd.  Being an adult sucks on that day.
Eating healthy sucks even more on that day.
So you have an internal conversation that goes something like this:

Brain: I'm on over load dude.  I can't cook tonight.
Body: We need fuel, and it has to be good!
Brain: ...But... Big Mac.

I know, I've been there too.
So here is what you need to do.  Keep a few recipes up your sleeve or, you know, on pinterest that check the following boxes:
Fast.
Fresh.
Light.
Minimal to no cooking.

Your weeknight dinner issues are solved.

I wrote about my quick go-to meal of kimchi, rice, and fried egg in this post.  Here is another easy go-to for busy weeknights when you still want a good meal:

Chicken Tostadas with Black Bean and Avocado Salsa

This meal is quick.  All you have to do is make the salsa.
Why?  Because you are going to go to Fresh Market, or Whole Foods, or where ever you like to shop and get yourself a rotisserie chicken.  I chose a garlic and herb one that was perfect for this.

So here's what ya need:
3 Tbsp fresh lime juice
1 Tbsp of olive oil
1/2 tsp ground cumin seed
freshly ground pepper
sea salt
1 c. tomato- diced
1/2 c. white onion- diced
1/2 can black beans- drained and rinsed
1 avocado- peeled and cubed
About 2 c. green leaf lettuce- shredded
About 2 c. of your chicken- also shredded.  Just use ya fingers, girl.  That's what we did.
Corn tostadas- if you're keeping it super clean there is an easy recipe to make them yourself here.
1/2 c. crumbled queso fresco
(Find the last two items in international)


And here's what ya do:
Combine the first 5 ingredients in a medium-large bowl and whisk together.
(Salt and pepper is to taste)
Then, add the next 4 ingredients to that bowl and toss gently.
Be careful, boo, you don't want to smash your 'cado.

And from there it's all about assembly.
Tostada first (obvi)
Then Lettuce
Then Chicken
Then Salsa
Then Cheese.


Be advised, Love, these are messy.
They will crack and crunch and fall apart, but they are oh-so good.

If you know you have a crazy week ahead of you, this salsa kept for 2-3 days tightly sealed.  So you could make it ahead of time and then there is literally nothing to do the night you eat it.

This is perfect for sharing too.  I think my ingredients made about 8 tostadas.  2-4 is a meal, so serve it with a quick salad, chips & guac, and if you're anything like me, a mojito.  Boom.  Instant laid back dinner party or date night.

Also, I used my leftovers to make salads at work all week.  Just layer everything over lettuce instead of a tostada.  I cracked a tostada over top and added a dash of my favorite dressing.
Perfect for lunch!
